Spaghetti Aglio e Olio with Breadcrumbs


Simple pasta meets garlic and oil, topped off with toasty breadcrumbs for a wonderful weeknight dinner. With a green salad, and crusty bread, you have a complete meal in minutes.

Spaghetti night happens all the time here. However, even this well loved favorite can get boring if you don't switch it up from time to time.

When you are coming home from a hard day at work and only have a few minutes to feed your family before they begin to revolt, what do you do? Your choices could be going through the drive thru, heating up a frozen TV dinner, or making this easy spaghetti aglio e olio!

What is spaghetti aglio e olio?

Spaghetti aglio e olio is a traditional Italian dish. Translated into English, it's "spaghetti with garlic and oil". It's an easy dish to customize, with different additions. Some add red pepper flakes, some will add Parmesan cheese, and even vegetables.

What kind of olive oil should I use?

Since the olive oil is really the star of this dish, you will want to use a high quality oil. I love Azure Standard's olive oil here.

Making your spaghetti aglio e olio:

  1. Fill a large pot with salted water and bring to a boil.
  2. Add pasta and cook according to package directions. Drain, saving some of the pasta water.
  3. Slice garlic into large slices.
  4. In a large dry skillet, toast breadcrumbs, stirring constantly to avoid burning. Remove to a bowl, and set aside.
  5. In the same skillet, heat oil and saute garlic until golden brown. Stir constantly to avoid burning.
  6. Add pasta to the hot oil and garlic, and stir to combine well. Season with salt, pepper, and red pepper flakes.
  7. Place in pasta bowls, and sprinkle bread crumbs on top. Serve with bread and green salad for a complete meal.

What kind of pasta should I use?

This dish traditionally uses spaghetti noodles. However, it will work just fine with other pastas as well. Try penne, elbow, radiatori, or even fusilli to change things up as well.
