My Lamb Pilau Recipe - Easy Guide.
Hi guys Today i will be teaching you how to make an Indian dish called Lamb Pilau.
For this recipe you will need;
- 500 grams of Lamb
- 2 Cups of rice (soaked for 30 mins)
- 1 Large onion (finely sliced)
- 1 Large Tomato (finely sliced)
- Ginger paste
- Garlic paste
- 1 Large Green Chilli (sliced)
- 6 Whole black peppercorn
- 4 Cloves
- 1 Cinnamon stick
- Corriander powder (2 teaspoons)
- Chilli powder ( 1 teaspoon)
- Garam Masala Powder ( 1 teaspoon)
- Salt to taste
- Cumin seeds (2 Teaspoons)
- Cumin powder (2 Teaspoons)
- Greek Style Yoghurt (1/2 Cup)
- 3 Large Potatoes ( chopped into medium sized pieces )
Stock requires;
- Onion (1 quarter)
- Garlic paste
- Salt
- 4 cups of water
- 500 grams of lamb mentioned above.
- Making the stock.
Add the 500 grams of meat in the pressure cooker Add the quarter onion, Garlic paste, Salt to taste and 4 cups of water. Put on the pressure cooker lid, leave it on high until the first whistle then put it on low heat for around 15-20 minutes.
After 20 minutes the stock should be ready. In another pot fry some onions until they are Lightly golden brown.
When they become light golden brown add in the ginger, garlic paste and green sliced chilli and mix in well.
Once that is done you can now add 1 cinnamon stick, 4 cloves, 6 black peppercorns, 2 tea spoons of Cumin seeds and mix in well and leave on medium heat until the onions are a dark brown golden colour.
Once the onions are a dark brown golden colour (see the image below)
Then we add in the 500grams of lamb and leave the heat on medium.
Now we are going to add in the spices, 2 teaspoons of Coriander powder, 1 teaspoon of Garam Masala Powder, 1 teaspoon of chilli powder and 2 teaspoons of Cumin powder and stir in well.
Once that is stirred in well. We now need to add in the tomatoes and half a cup of yoghurt and mix in well.
After its mixed in well and the oil has come to the top it should look like this
Then we need to add 4 cups of the stock and stir in well.
Once that is stirred in well taste a little to see if you need to add more salt and put the flame on high until it comes to a boil and add in the potatoes.
Once it comes to a boil it should look like this and we now need to add the chopped potatoes in and stir it in well and leave it until the potatoes are 80% cooked.
Once the potatoes are 80% cooked we now need to add the rice that has been soaked for 30 mins - 1 hour put it on high heat until the rice absorbs the water
Once you see the rice has been absorbing the water it should look something like this. Now we should put the heat on low and put the lid on until the rice absorbs the rest of the water in the pot.
Once all the water is absorbed it should look something like this, Now don't worry if the rice is looking a little bit wet just leave to the side for 5-10 mins to cool down and then serve.
