Buddha Bowls and Vegan Finds

Im constantly in search of finding new vegan foods and concoctions I can stir up in the kitchen that will give me all the nutrients I need while making my taste buds happy too!

Today, while out in the city, I made a stop at a local restaurant and ordered two vegan appetizers that were incredible! One was a Falafel Rice Cake that was made up of ground chick peas and seasoning with a side of Tahini dipping sauce. The other was Baba Ganouj which conists of roasted eggplant, garlic & sesame oil pureed, topped with olive oil. I have never tried either of these foods or anything even similar so I was really excited and let me tell ya, I was more than happy with the amount of flavor and consistency of both appetizers and finished everything on my plate!

For dinner, I wanted something more subtle so I decided to make buddha bowls. A buddha bowl, to me, is a bowl of made up of colorful ingredients that are going to fulfill the nutrition pyramid criteria. For my buddha bowl, I mixed together brown rice, corn, pico de gallo, black beans, and vegan sour cream to top it off. Its aesthetically pleasing and it provides you with the nutrients you need to stay strong.

A little back story on today. I woke up extremely drained and everytime I would get up to go work on a project my eyes would slowly start to close. I FELT LIKE CRAP. After eating all my meals I instantly became human again! You dont need energy drinks you just need good wholesome food. #plantpower 🌱
