Recipe Monday: Ofada/Ayamase Stew

Today we would to like to share with you one of the popular dishes from the Western and some Southern part of Nigeria 🇳🇬. A picture of this dish was previously posted in our introduction post😀. What we would like to share with you today is a simple recipe of 'Ofada/Ayamase Stew😋.
The dish is such a party pleaser😁and can also be enjoyed with family, friends or by yourself as lunch or dinner, in Nigeria as breakfast too😄. If you like spicy 🌶🔥 food like us, then you are in for a treat. However the spice level can be moderated to your taste. as it is served with boiled rice or the local rice 'ofada rice' as it is called by Nigerians.

NB: Any type of rice can be served with the stew.
We also didn't use Locust beans popularly called iru by the Yoruba's which is traditional used. However, you can add this if you can get it.

Here is a step by step process on how to make this dish with pictures🙂, so you too can be adventurous and try out this dish.

First step is the ingredients you need to made this dish:
In a Blender, blend together:{2 Green bell peppers,10-15
Red chilli peppers -shombo(shombo, as it is popularly called in Nigeria😉)
6-8 stotch bonnet pepper (Ata rodo)popularly called in Nigeria😉. This can be reduce if you don't like it to be too spicy.
2 medium size red onions
1 white onion}
3 boiled eggs (boil 3 eggs)
Palm oil
Chopped red onion - one small or medium size onions
Cooked beef
Cow skin/Kpomo -chopped
1 medium size Smoked fish
Dried Big crayfish/prawns - quantity as desired.
Beef stock - You get it form cooking the beef or you can buy from store.
Paprika - Optional
Salt, Seasoning cube
Curry Powder
Locust beans - Optional

The next step is steam your peppers and onions mixture to reduce excess water: Pour the blended paste in a pot and the beef stock, place on medium heat 🔥and steam until water reduces/evaporates😉

Step 3: While the mixture is reducing, place a pan on medium heat and pour in the palm oil😄
Fun Fact: Palm oil is usually made from 'Palm fruits' which are fruits of 'Palm trees'. It is regularly used in Nigeria in most of our dishes😃.

The aim of step 3 is to bleach the Palm oil so it is a bit translucent🙂. Allow to cool down a bit.
NB: You can skip the bleaching process by using 'Vegetable oil' instead in order to avoid this process and a bit of smoke in your Kitchen😂😅

Next step is to start adding all the ingredients😁:
Add the Chopped onion and saute a little

Add the steamed blended peppers and onions and Stir fry for 1-2 minutes

Add Curry, Paprika and salt and cook for some time

Add the cow skin (Kpomo as we usually call it😅) and the Dried big crayfish (prawns), add lightly fried or cooked beef, the dried fish and the boiled eggs (Already peeled eggs 😉). See Pictures below:

Finally add the seasoning cube (season to desired taste), stir and Cook for 3-5 minutes on medium - low heat🔥.

Finally😋🙂 Your Ofada Stew is ready.
You can serve with any boiled or steamed rice of your choice. Here, we served with the local rice which is Ofada Rice. Pictures below👇

Hi @josediccus we bought back home, but there are a few African vendors (not so many) that also sell.
