I would love to meet people in person again! But as you said, travel planning is more challenging than it used to be. My plan is to be in Porto, Portugal the whole month of September. So if it's there or easily reachable from there, I would do my best to join!
Another option would be Bansko, Bulgaria (for cost saving). I'm not sure if you've ever looked into that. There's a big digital nomad community there and the weather will still be amazing in September, for hiking, etc. This is where my current base is when I'm not travelling. I'll be back there in June/July for https://www.banskonomadfest.com/ so could give you a tour in case you wanna come and check it out :)

And you never know what can happen in a few months. I've made it to three, I'm not just going to give up now hehe. Bulgaria sounds great to me :)

Ireland was getting too strict, too restricted, too cold, too wet, too boring LOL. It was time to move on.
Oh wow, congrats! Yeah, while I have a love/hate relationship with Mexico, it's highly likely I'll end up there sooner or later for the same reasons ;) Right now I'm pretty happy in Europe, but venturing out to Africa later this year and hopefully Latin America by the end of the year.
