This recipe can be perfect as an appetizer or like a starter.
Cucumber goes well with tuna, creating a dish with a fresh and at the same time decided taste.
Cucumber in carpaccio with “Sicilian” lemons have a rightful first place in this recipe.
The kind of cucumber we have chosen for the occasion is the Dutch one.
Let's discover together how to prepare this delight:
TUNA PATTY'S INGREDIENTS
Tuna in olive oil 200 g
Cucumber 1
Breadcrumbs 2 tbsp
Parmesan Cheese 2 tbsp
Eggs 2
Sicilian Lemons 2
Salt to taste.
Extra virgin olive oil
Parsley

CUCUMBER'S MAYONNAISE INGREDIENTS
Cucumber 1/3
Eggs 1
Sunflower oil 250 ml
Salt
Lemon juice 5 ml
PREPARATION
PHASE 1
Wash cucumber, remove final part and start to cut with a slicer to get very thin slices.
Now choose slices of the same or similar diameter and put them in a bowl.
At this point we cover these with olive oil, lemon juice (half a lemon is enough) and a pinch of salt.
Mix everything and let it stay for at least two hours.
From time to time we stir the slices.
STEP 2
We prepare the crumb.
For make a perfect home-made crumb we need 4 ingredients:
leftover bread
Parmesan cheese
Parsley
Salt
Just blend all these ingredients with a mixer to get our medium-grained crumb.
STEP 3
Dry tuna from oil.
Grate some Parmesan cheese to have ready.
Put two eggs in the mixer and start to blend.
After 50 seconds, turn off the mixer and add tuna, 2 tablespoons of breadcrumbs, 2 tablespoons of Parmesan and a pinch of salt.
So let's mix it all for 50 seconds.
STEP 4
Now take a shape or an oval container - length 20 cm height 5 cm - (this will help us to define the tuna patty).
Case the shape with a sheet of foil, trying to position it in such a way that the lower part is as smooth and homogeneous as possible.
For this passage, password is gentleness : ) !
STEP 5
At this point we pour the tuna-based mixture into the shape and start to close it.
To close it you will need to take the horizontal margins and start to roll them, making sure that these are well sealed, so we also take the side and go to close as if it were a candy.
Now take a pan, fill it with cold water and dip our candy.
Let's put on the fire and start cooking over medium heat.
When the water has reached boiling we wait 25 minutes of cooking.
After 25 minutes we leave the patty of water and let it cool for about half an hour.
STEP 6
Prepare the mayonnaise:
Put two non-cold eggs in the mixer and start mixing.
Add sunflower oil a little at a time until the mayonnaise is thickened
Now put 4/5 slices of cucumber, salt, lemon juice in the mixer.
Mix everything and taste salt and lemon
STEP 7
We gently remove the foil and place the tuna patty on a sheet of film.
Now we start place our marinated cucumber slices covering our shape entirely.
So we close the film and carefully compressing everything, close it like a candy and put in the fridge for 4 hours.
STEP 8
In a bowl, pour a little oil, the juice of half lemon, and a sprinkling of black pepper.
We mix everything and let it rest.
STEP 9
It's time to make the dish!
We delicately remove the film, place our creation on a serving plate and cover the bottom of the plate with the cucumber's mayonnaise
Use the mixture of oil and lemon prepared first to brush the surface of the preparation.
The dish is ready.

Invent this recipe based on cucumber was very fun and creative. In Sicily we do not use this vegetable very much so it was a nice challenge for me :)
