Khychin - a cake made from thin dough with cottage cheese, pickled cheese or meat stuffing with herbs, a national dish of Karachais and Balkarians. According to their prestige, they were evaluated by Karachais and Balkarians differently, but all of their varieties were very popular among the people. The supreme hospitality of the hostess of the house in the past was considered to be an invitation to "hutchins". This is one of the most honorable dishes in the list of flour dishes of Karachay-Balkar cuisine. Any feast was simply unthinkable without khichin. The meal without kychin is considered poor, especially without the meat of the meat.
