Ingredients
🥬 1 8oz bag of spinach, washed
🍚 1/2 cup of rice, washed
🥕 2 cups of frozen mixed vegetables
🧅 1 small onion, chopped
🧄 1 clove of garlic, chopped
🍅 1 6oz can of tomato paste
🌿 Cilantro, as much as desired
🐓 2 tablespoons of chicken bouillon
🧂 1 teaspoon of salt
🍋 1 teaspoon of citric acid or 1/3 cup of lemon juice
🌶️ 1/2 teaspoon of black pepper
🌶️ 1/2 teaspoon of crushed red peppers
🥄 2 tablespoons of oil
🥖 1 baguette, sliced on an angle
🧈 2 tablespoons of butter
🧄 1 teaspoon of garlic powder
🌿 1 teaspoon of dried parsley
Instructions
1- Prepare the Soup:
- In a large pot, heat 2 tablespoons of oil over high heat.
- Add the chopped onion and garlic to the pot, sauté for about 1 minute until fragrant.
- Stir in the rice, sauté for another minute.
- Add the frozen mixed vegetables and the washed spinach. Cover the pot and allow the spinach to wilt.
2- Add Tomato Paste and Spices:
- In a separate bowl, dissolve the tomato paste in 6 cups of water. Add this mixture to the wilted spinach and rice in the pot.
- Stir in chicken bouillon, salt, citric acid (or lemon juice), black pepper, and crushed red peppers.
- Mix well, then add cilantro and stir again.
- Bring the soup to a boil, then reduce heat to low and let it simmer for 15 to 20 minutes until the rice is fully cooked.
3- Prepare the Baguette:
- Preheat the broiler.
- Melt 2 tablespoons of butter in a small bowl. Mix in garlic powder and dried parsley.
- Spread the butter mixture evenly over the sliced baguette pieces.
- Place the baguette slices on a baking sheet and broil until toasty and golden, about 1 minute.
4- Serve:
- Ladle the steaming soup into bowls and serve with the toasted baguette on the side.
