Ingredients:
🌶️ 1 poblano pepper
🌶️ 1 Anaheim pepper
🧄 4 garlic cloves
🧅 1/4 of a small onion
🌿 A small bunch of cilantro
💧 2 cups water
🥒 2 large zucchinis
🛢️ 2 tablespoons cooking oil
🥩 1 1/2 lb pork meat, cut into small chunks
🧂 Salt to taste
🧂 Black pepper to taste
🌿 1 teaspoon cumin
🌿 1 teaspoon oregano
🌽 1 can of corn (drained)
🌽 3 tablespoons corn flour
Instructions:
- Prepare the Sauce:
- Remove the seeds from the poblano and Anaheim peppers.
- In a blender, combine the peppers, garlic cloves, onion, cilantro, and 2 cups of water. Blend until smooth and set aside.
2. Prepare the Zucchini: - Chop the zucchinis into bite-sized pieces and set aside.
3. Cook the Pork: - In a hot pan, heat 2 tablespoons of cooking oil over medium heat.
