Instructions
1- Preparation:
- Grate both the Mozzarella and Chihuahua cheeses using the large holes of a box grater. Set the grated cheese aside in a bowl.
- Finely chop ¼ of a white onion and mince 1 clove of garlic. Keep these aside in separate small bowls.
2- Cooking Chorizo:
- Heat a cast iron skillet over medium-high heat and add 1 teaspoon of avocado oil. Allow the oil to heat for about 2 minutes.
- Add 300 grams of pork chorizo to the skillet. Break it into small pieces using a spatula and cook until browned, about 5 minutes.
3- Adding Vegetables:
- Add the chopped onion and minced garlic to the chorizo, stirring constantly. Cook for another 5 minutes until the onion becomes tender and translucent.
4- Assembly:
- Turn off the stove. Use a slotted spoon to transfer most of the chorizo mixture to a plate, leaving a small portion in the skillet.
- Spread half of the grated cheese over the chorizo remaining in the skillet.
- Layer the reserved chorizo mixture over the cheese, then cover with the remaining cheese.
5- Melting Options:
- Stovetop: Cover the skillet with a lid. Cook over medium-low heat for 10-15 minutes until the cheese is melted and bubbly.
