I felt not-so-great so I baked a cake.
It's that time of the year when we are starting to get Finnish strawberries which are obviously superior to their imported counterparts. I bought a little pack of them and everything else I got by rummaging around the fridge. I had an expired pack of mascarpone and opened heavy cream, both of which I determined to be perfectly fine after a sniff and taste test. For the actual cake I just made the most simple sponge cake using the trusty 3 cup method taught to me by mom or grandma. It's not very exciting but does the trick and pairs well with fresh berries and an excessive amount of cream.
I moistened the cake with real apple juice and slathered a bit of store bought raspberry and strawberry jam in between the layers along with the cream mixture that had mascarpone, whipped cream, powdered sugar, vanilla sugar and grated lime zest. I love decorating a simple cake with just a shitload of strawberries, some mint leaves and for extra cuteness; lilacs that are just blooming in our yard.
For the amount of effort put in versus the results, this cake came out pretty darn good. I served the cake with Cava, and there were no complaints.
That looks fantastic!!! And I'd definitely enjoy washing it down with a little bit of cava.
I've never thought of adding some lilac peddles to something like this.... hrmmm... That's a very good tip.
I have interned in a couple fine dining restaurants and they often use edible flowers to decorate salads and desserts. I decided to google which plant in my garden is edible and found out lilacs were :) They don’t taste much of anything like that but they have a very lovely scent that works well with the strawberries in my opinion :)
Omg yum! Yesterday I harvested some strawberries so I’m thinking I’d serving them up with cream today! This looks amazing!
My strawberries are blooming now so it'll take quite a while until I can harvest my own :D
