Hello, Steemians! Welcome to Adsactly's weekly foodie post. The last few posts I have been posting some delicious and healthy salads, and I've decided to do something a little different this week.

This week's recipe is for my home made Southern fried chicken. It's crunchy, slightly spicy, and so, so TASTY!!! I made my favourite Asian slaw and a wasabi aioli to go with the chicken. It could definitely be served in a bun or pita, as a burger/schwarma situation, but I wanted to keep it light, so just had the slaw and a few leaves of baby spinach.

Here's How:


INGREDIENTS:

For the chicken:

  • 1 - 2 cups of canola oil
  • 500gr chicken breasts, chopped into bite sized pieces
  • 500ml buttermilk
  • 1 cup of flour
  • 1/2 cup semolina flour
  • 1 T smoked paprika
  • 1t cayenne pepper (according to taste)
  • 2 t garlic powder
  • salt and pepper

For the Asian Slaw:

  • 1 x baby red cabbage, chopped finely
  • 6 large carrots, grated (large pieces, not too fine)
  • 1 x ear of corn
  • 1 cup of peanuts
  • small handful of coriander, finely chopped
  • 2 T pickled ginger, chopped finely
  • 1 T Demerara sugar
  • 1 t asian five spice

METHOD

Add your chicken into a shallow bowl, and lightly salt. Cover the chicken in the buttermilk, and gently mix together. Leave the chicken to marinade for at least an hour, or even overnight if you have the time.

In the meantime, prepare your slaw. The main body of the slaw is the carrots and cabbage. Mix those together, with the coriander and ginger. Roast your ear of corn on a high heat, and set aside to cool. Once cooled, add the peanuts and corn. Just before serving, toss the slaw with the sugar and five spice.

Now, mix together your flour and spices. Set your bowls up next to each other. First the chicken, then the flour mix, and then, an empty, clean plate.

The key to this dish is to be prepped. Set up your flouring station, as above, and then, in a deep frying pan, pour in your oil, about 5cm deep. Heat your oven hob to a medium high heat, and leave the oil to heat up. Now, coat your chicken in the flour, and place on the clean plate. Get about a plateful ready, and salt.

Test fry one piece. The oil should sizzle while cooking, and a piece should take about two minutes a side to fry. The coating should be crispy and hard, and not soggy or falling off. If the coating is a bit soggy, turn your oven up a notch, your oil is not hot enough. When you're ready and happy, fry the chicken in batches, resting on kitchen paper to soak up the oil.

Serve with the slaw and wasabi aioli (simply mixed some wasabi powder with Japanese mayo)

Don't you boil chicken in water before frying?

hi @hiroyamagishi! Thank you for your comment. It is not necessary, as the oil is very hot. When it's small pieces like this, a few minutes per side is fine. If it's a larger piece, you'll need to cook it longer. The reason we marinade the chicken in the yoghurt is to tenderize it. By boiling the chicken, it will toughen. 😽😽😽

If it are larger pieces you can always steam them a little bit (not Steem lol), this will not thoughen the meat, but it will take less time to fry them, so you won't overfry them. Just a little hint. @adsactly and @hiroyamagishi and @princessmewmew

OMGosh! There is nothing comparable to buttermilk southern fried chicken! So delicious and the crunch every time you bite into it! HEAVEN on earth!

Hmmm, what shall I add as accoutrements to this culinary delight? Well, let's start with macaroni and cheese, cornbread, potato salad, candied yams, and last but not least, well seasoned black eye peas. That's how we roll in the Deep South. ;) Thanks for your nice post and of course the recipe.

This was definitely written by a true Southerner! Though I would Veganize these recipes, you're definitely right on point in your description of a Southern Fried Chicken Plate. Sounds like a traditional "meat and three" to me!

For those folks who wish to take things up a level, just slide in a nice portion of collard or turnip greens. Oh, and the suggested beverage is sweetened ice tea.

hahaha! omgosh, I would die if I ate the chicken with anything else other than salad or slaw. Something I can never understand is how Americans have mac n cheese as a side! It's a main dish here (South Africa)... and I totally understand what @jaalig is saying - we have similar foods when we have our traditional braais (barbeques) but it's normally a meat and a few salads, like coleslaw, potato salad and a bread... So, I suppose it is very similar!

I loved the article. Glad you didn't miss the buttermilk. I am from the deep south. Never serve Asian salad with a Southern Fried Chicken. Your heat was too high, that is the reason for the overcooked skin.

I think you do a great job, but I also see viewers telling you whatever you want to hear and I thought that I would give you a little honesty. Make no mistake about it though, I would have cleaned the plate.

hahaha! Thank you - I love your honesty! I think it may be the photo editor that made it look so brown, but in all honestly, it was not that dark.

My style is very much fusion, I could NEVER eat the sides that are traditionally served with the chicken - I must say just the oil smell made me a bit sick, lol! I don't ever eat fried food, and this was a treat for us. It was tasty, but definitely a once a month kind of meal!
