A very hardy weed here in Florida, wood betony, happens to be an edible vegetable.
It's growing here all over the place. The leaves and stems are good
and later little tubers will form that are really fun in salads.
I made a soup from the leaves, stems and roots, no tubers yet... later in the spring,
Adding peanuts, curry powder, salt, methi seeds, hing and water.
