When you talk to people about a diet they often say "but I like my desserts" I like that too from time to time 😊
The thing I really like about the #KETO lifestyle is that you don't have to skip desserts. There are plenty of yummie things you still can eat. So if you are a sweet tooth, here is a delishious recipe for you to try.
Ingredients
for the bottom
- 75 gr dairy butter
- 2 tbs liquid sweetener
- 50 gr grated coconut
- 35 gr coconut flower
- 1 egg
- 1 ts baking powder
for the batter
- 2 eggs
- 1tbs lemon juice
- 2.5 tbs liquid sweetener
- 300 gr cream cheese (sugar free)
- 1 tbs vanilla extract
- 50 gr cottage cheese
- a big handfull of red fruit ( or blue berries)
- an electric mixer
- 1 mold
- a little bit coconut oil to greese the mold
Now let's start cooking 🍰
Method
Add the coconut flower, butter, baking powder, grated coconut and sweetener in a bowl and mix it all together with an electric mixer. Mix it all together until you have this grainy looking mixture. Add the egg and mix again.
In the mean time, preheat the oven at 180 degrees celsius and grease the mold. Add the mixture to the mold and gently press it down with a spoon or fork. Place it in the oven. for about 10 minutes , take it out and let cool down. Clean the bowl and mixer because you need it again.
Now for the batter.
Add the eggs, lemon juice, cream cheese, cottage cheese, vanilla extract and sweetener into the bowl and mix it into a smooth batter. preheat the oven at 180 degrees celsius.
Poor it into the mold and gently tap the mold on the counter to get rid of the air bubbles.
Place the mold into the preheated oven and cook for about 28 minutes.
let it cool down for 1 hour carefully take it out of the mold and decorate with the fruit.
You can also add some sugar free whipped cream sweetened with liquid sweetener.
