Palacsinta - Hungarian Rolled Crepes

Hello Friends!

Yesterday I got a call from the hospital, letting me know what time I have to check in at the surgical reception and whatnot. Man, the nerves are wrecked even more, I feel. I don't think I will ever be ready for this kind of thing. Wedding day, giving birth, all feel like nothing compare to this now 😅 Until more nerve wrecking thing comes a long, I guess 😅

Let's just share recipe, enough crazies in my head, renting free 😅

My youngest was asking his grandma to make this Hungarian Pancake, but grandma didn't really give an answer, and he kept begging, so this momma to the rescue 😊

4 c strong baker's flour
A generous pinch of salt
6 tbsp sugar
6 eggs
1 tbsp vanilla essence
6 tbsp peanut oil
5-6 c hot boiling water

Unsalted butter, as needed

Ovaltine powder
Jam of your choice
Peanut butter of your choice (we used PB2, crunchy, and smooth peanut butters)

In a bowl, mix flour, sugar, and salt.

In a food processor, combine eggs, milk, and essence. Pour mixture into flour mixture, stir.

Add in peanut oil and 1 c of hot boiling water at a time, until completely combined.

Strain mixture and discard lumps

Cover and let rest for an H

Preheat pan on high heat, brush pan with unsalted butter, then lower heat to medium

Pour a ladle of batter, tilt pan to spread the batter, creating a crepe/thin pancake, cook for 2-3 minutes

Place crepe on a plate, repeat steps

Fill crepes with whatever you wish, jam, Ovaltine, etc, roll and serve
