Loaded Tomato Soup

Hi Friends!

Feels like it's been ages. I haven't been busy. I have been sick. Yes. Sick. Always. Like what the what??!! 🤣 I had no appetite for close to 1 week, yet I was gagging like crazy. Nope. Not pregnant. No fever, but my feet were icy cold. My voice was gone for 2 days, and only on last minutes, I developed coughing and runny plus stuffy nose. That was from Friday to Wednesday. Thursday I felt better, so I returned to work. So that was last week. This week though, I still don't feel 100% fit. What a meh big time.

Funny story. I have been back juicing. Tons of fruits, tons of veggies, tons of chia seeds (well, a tsp here and there). So what the heck, right? I should be healthy as a horse!

More funny (was). A colleague I know at work, who doesn't work in the same office, also sick with similar symptoms. But he got it worst. He ended up in hospital 😬

I so hate bugs. Enough said 😅

Today's recipe share is warm food for my soul. I wanted to make chili, but I did not have fresh tomatoes, canned tomatoes, nor tomato paste. I only had canned tomato soups. So, loaded tomato soup it was in the end 😊

800 g ground beef
2 cans tomato soup (@248ml each)
2-3 cans water (using the tomato soup's tin)
2 carrots
10 baby potatoes
1 celery
1 large can Fava beans
1 medium size onion
8 garlic
Cumin to taste
Celery salt to taste
Freshly cracked black pepper to taste
1 heaping tsp sweet paprika powder
1 heaping tsp sugarless hickory BBQ sauce

Cube potatoes, slice celery, scrape skin and slice carrots, set to side

Drain Fava beans, rinse
Slice/dice onions and garlic, set to side
Brown beef, drain juice

Stir in onion and garlic cook for 1-2 minutes, then add in veggies, stir
Pour in condensed tomato soup and water, stir to combine

Season, add in beans, and continue cooking until veggies are tender

Serve with toast!
