
I had 4 cans of Salmon sitting on the pantry shelf for a while and decided to take time to make patties with them. I love Salmon in any fashion, and since I'm doing my best to stay on a Keto / low carb diet, I thought these would be good for some lunches.
Salmon Patties
13-15 ounces Canned salmon
1 cup Breadcrumbs or crushed Saltine crackers (I used both)
1 tablespoon Garlic, minced
2 tablespoons Onion, chopped
2 tablespoons Italian flat leaf parsley, chopped
1/3 cup Mayonnaise, plus one extra tablespoon
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1 Egg, beaten
Salt & Pepper

Open the salmon and drain liquid and remove any skin and large bones. Break the salmon into chunks in a large bowl.

Add the breadcrumbs, garlic, onions, and salt and pepper to the salmon.

Mix all the wet ingredients and parsley together and fold into the salmon mixture.

Shape the salmon mixture into 4 patties about 1/2" to 3/4" thick.

Melt cooking fat in a frying pan on medium heat and sauté each patty for 3 minutes each side or until the crust is a golden brown.
Serve immediately with Tartar Sauce or a slice of fresh lemon.

I doubled this recipe and froze the rest of the patties and vacuum sealed them. It will be easy to thaw one overnight in the fridge to have the following day for lunch. Even though the breadcrumbs have carbs, I get the benefit of the high fat in the salmon for my Keto diet. The rest of the day I omit having any more carbs.
I started doing the diet the last week of October and thus far I've dropped a solid 7 lbs. By the end of this year, I'm looking to drop at least 5-7 more even with the holiday dinners. My fasting window starts from 7:00 p.m. and usually goes to 1:30 p.m. the following day. It seems to be a comfortable time frame so far.

My grandma used to make potato and tuna patties with rosemary in them. They were really good! I have cravings occasionally.

I'm supposed to be, but mostly failing atm. I try to go from 6PM to noon for the fasting and I also avoid mostly all carbs except vegetables. But not atm...sigh...
When I started keto in April 2024 I lost 20 lbs by June, kept it off during the summer, and put some back on when the SAD hit in the autumn/winter.
All we can do is keep trying, right? I screw up with carbs too, I make things for my husband and then I taste a little, sigh.... I have to have some stuffing with the turkey so after my brother leaves Sunday, I will get back on track and start all over again. My doctor was so pleased with my bloodwork that she encouraged me to keep doing what I am. My goal is at least 30 lbs. perhaps by summer I will be close.
