Since last summer, I’ve been making this “accordion cucumber” dish often.

I squeeze the water out of a cucumber after making cuts in it, then season it with doubanjiang, soy sauce, sesame oil, and sugar. Sprinkle sesame seeds on top, and it’s done—super easy! They say making finer cuts gives it a more refined look… but I still need more practice😅

Doubanjiang is too spicy for me, so I don’t eat much of it, but my elder son loves spicy food. Come to think of it, he’s loved cucumbers since he was little. I’ll never forget when, in his early elementary school years, we took him to a buffet restaurant, and he put a whole display cucumber on his plate, eyes sparkling (We made him put it back, of course)😂

He devours spicy kimchi or ramen, saying, “Not spicy, not spicy at all!” I wonder if he thinks eating spicy food makes him cool… Typical middle school boy

Lately, his words and actions have been irritating me a lot, but he’s working hard every day with club activities and juku (cram school) during summer break. Since this side dish is easy to make with just four cucumbers and some seasonings, I’ll try to make it for him as often as I can 💪

昨年夏から、よくこの「蛇腹胡瓜」を作るようになりました。

切り込みを入れた胡瓜を絞って水気をとり、豆板醤、醤油、胡麻油、砂糖で味をつけます。最後に胡麻を振って完成!切り込みは細かく入れると高級感が増すそうですが… 私はまだまだ修行が足りずです。

豆板醤は私には辛過ぎてあまり食べられないのですが、長男は辛いものが好きです。そういえば、長男は小さい頃から胡瓜も好きでした。小学校低学年の頃に連れて行ったビュッフェで、ディスプレイ用の胡瓜を丸ごと一本皿に乗せて目を輝かせていたのが忘れられません😂(返して来させましたが)

明らかに辛いキムチやラーメンの類を「辛くない、辛くない、全然辛くない!」と言って掻き込むのですが、「辛いものを食べられるのがカッコいい」みたいな意識があるんですかね… なんというか、中学生男子ですね😅

何かと腹が立つことも多い長男ですが、夏休みの部活も塾も毎日頑張っています。胡瓜4本と調味料でできる簡単なおかずなので、できるだけ作ってやるかー、という感じです。

I was struck by the way you cut the cucumber. It's the first time I've seen it and I find it funny. I'll make a note of the recipe and I'll definitely try it. It's ideal for those of us who don't like cooking, especially now in the summer heat. Teenagers can be annoying at times, but as long as they fulfill their obligations and don't get into serious trouble, there's no choice but to be very patient. Too bad you can't get revenge by putting hot sauce in their food, ha ha ha. I laughed at the anecdote about the buffet. Children are unpredictable and surprise you by getting excited about things that we adults don't value. Thanks for sharing!

Ohhh, I think I watch a vlog about this cut if cucumber. Looks good, I usually just eat cucumber with salt, sometimes with salt, pepper and vinegar. But the way you seasoned it looks really good. Could be a good side dish too no?

Yeah, adding doubanjiang makes it spicy, but it's also tasty, so it's good enough as a side dish. My son can eat rice with just this😂 I think salt and dressing would go well with it too!
