Introducing "Lumpiang Toge" - My Wife's Favorite Snack (2 part cooking)

Greetings!

Here's a dish that is my wife's favorite and it is actually one of my favorites too! I always eat a lot of this dish whenever it is served to me. I love to just buy this dish and eat them right away because cooking it takes quite some time since it is cooked twice. But cooking it on your own is very rewarding because you can eat it while it is hot (which is best to eat while it is hot).

This is also versatile because you can eat it on its own or you can eat it with rice, you can dip it with vinegar/onion/ground black pepper, sweet & sour sauce, and even with catchup but I prefer dipping it with vinegar/onion/ground black pepper.

This dish's main ingredient is sprouted mung beans that can be bought from local markets anywhere in the country. You can also add some cabbage to it.

So, without further ado, here's how I cooked this very delicious dish...

  • Bean Sprouts (Toge/Mung Sprouts)
  • Tofu (Tokwa)
  • Sweet Potato
  • Green Beans (Baguio Beans)
  • Tomato
  • Onion
  • Garlic
  • Ground Black Pepper
  • Spring Roll Wrapper (Lumpia Wrapper)
  • Salt (to taste)
  • Cooking Oil

Prepare the bean sprouts by washing it with water

Slice the Tofu into frying sizes

Peel and slice the sweet potatoes

Slice the green beans

Wash and slice the tomatoes

Peel and slice the onions

Peel and slice the garlic

Prepare the ground black pepper

Prepare the Spring Roll Wrapper

1. Fry all the sliced Tofu

2. When it turns golden brown flip it then continue frying the other side

3. After frying let it cool

3. After all the fried tofu has cooled down slice it into cubes then set it aside

4. Sautee the garlic, onion, and tomatoes in a cooking oil

5. After sauteeing add some water to boil the tomatoes

6. Add some salt, add more later if needed

7. When the tomatoes have become saucy add the green beans

8. Add the sliced tofu

9. Add the sweet potatoes

10. Stir

11. Add some water, enough to submerge all the ingredients, then let them boil

12. When the green beans are about to be cooked add the bean sprouts

13. Add the ground black pepper

14. Stir

15. When all the ingredients are cooked and if the taste is now okay turn off the heat and let it cool

16. When the cooked bean sprouts are already cool, get some and put them in a spring wrapper

17. Then roll it (4 steps)

18. Do the same until you wrapped all the cooked bean sprouts

19. On a frying pan, heat some cooking oil then fry the wrapped bean sprouts

20. Flip when the other side turns golden brown, do the same to the remaining wrapped bean sprout and it is done...
