I have been living in El Salvador for about 4 years (in total, throughout 14 years), but I have never tried the flor de izote, even though I have seen it and heard all about it, since this is a very famous El Salvadorian flower. Flir de Izote is the national El Salvadorian flower.
While visiting some family, we were gifted with a lot of flor de izote, which can be quite hard to cut it, since they can grow up to 12 feet tall.
We got quite a bit of the flor de izote.
Which lasted us about a week, even though we ate lots with eggs every morning and with soups.
I would prepare the flor de izote for scrambled eggs.
I woils boil the flir dd izote for abot 10 minutes and strain it.
I would cut yhe into smaller pieces ( in half).
On the pan I would cook some onion and garlic with butter.
I would add sliced pieces of tomatoe to the onion. Next, I would add the flor de izote and cook it some more with some salt, paprika and pepper.
Once it was all ready, I would add the eggs and cook it. But again, I forgot to take the picture of it.

Does this plant only grow in El Salvador?
To tell you the truth, I am not sure. All I know that it also grows in Mexico.
Ohhhh our lovely and beautifull national flowers guau the bitter flavor is so delicious.
Yucca Elephantied are one of the best local plants here, good taste lady.

Yes. They do have a bitter flavour, so you really have to use all different kinds of spices to make it tasty. We really enjoyed it with eggs and soup.
