How to make a heart warming bowl of Lamb Ribs Soup - Cooking the Romanian Style

Hey guys,

I don't know about your culinary preferences or let's say, culture or country, but here in Romania lamb soup is very often made from the beginning of spring when lamb is available. If you're a vegetarian or vegan or simply don't like lamb meat, then this recipe isn't for you.

At times, it's hard for me to chose where to post my recipes; rather in Foodies or my own community HealtyHappyKids but I think this time I'll go with Foodies because it's something I'd like to share with you all and plus, it's a basic recipe, for all family members.

The secret of this recipe is this one ingredient, besides the lamb: fresh lovage!

Many Romanian soup and broth recipes have lovage in them but maybe it's not so popular in your country? Did you ever used it in some of your recipes? In a few lines, fresh green lovage is used as a herb and the seeds as a spice. And the flavour is something in between Parsley and Celery, but somehow more intense.

The thing about Lamb Soup in Romania is that it absolutely must include lovage. It's not just a suggestion or an optional ingredient; lovage is 100% part of the dish, essential for its authentic flavor. It's a classic combination in our culinary tradition. Without lovage, the taste just isn't the same. So, if you're making Lamb Soup, Romanian version, you simply can't skip the lovage unless you really hate it. But I guess then it's not going to be a Romanian recipe...it's just a lamb soup.

Here are the Ingredients:

These can vary from one area to another. Here in Romania, we also have several geographical regions with different culinary traditions, and not just that. Generally speaking. Anyway, the ingredients here are the ones needed to have a Lamb Soup with a Romanian taste. 😜

  • lamb ribs (but you can use other parts if you'd want)

  • one onion

  • two carrots

  • one parsnip root

  • one piece of celery root (not a whole, just a piece)

  • two potatoes

  • 1/2 cup peas

  • spring onion 1-2 (optional)

  • fresh green parsley

  • one large handful of green lovage

  • one handful of wild garlic (optional)

  • olive oil (1-2 tbsp

  • salt and pepper

You'll also need sour cream and bread for serving.

Cooking Instructions

Start by adding 1-2 Tbsp olive oil into a large pot, on medium heat.
Add all the veggies except the greens, chopped in small pieces (see the photo below) , turn the heat to medium-low and saute them for about 5-10 minutes.

Add in the lamb ribs and saute for another 5 minutes.

Chop your greens and add them in the pot as well. Add enough water to cover all the ingredients and let it boil on medium-low for about one hour. After that, you can add some more fresh lovage and that's it. The lamb soup is ready to be served!

It's just the basic recipe everyone can do at home with minimum effort. And you don't need experience in the kitchen. Maybe there are more fancy recipes for this Lamb Soup but you can't fail with this simple one right here.

I hope you're not dissappointed for how easy this recipe is.😁
Basic ingredients and basic cooking instructions.

Healthy, heart warming, comfort food in a bowl, ready to be enjoyed for lunch or dinner. If you're adding in the extra bread and sour cream.....that's ever better.
There's not too much lamb meat with this recipe. The quantity of lamb it's more for the taste but you can add a bit more if you'd like.
The lamb meat, if fresh, it's tender and soft and it has a special taste.

Is there a traditional soup recipe in your country that's widely enjoyed? Does it have a key ingredient? I'm quite interested in hearing your thoughts and perhaps learning about the soups popular in your region!

Take care,

missdeli

So...no Lindt? 😊

We don't really have a "traditional" soup in Australia although pumpkin soup is quite popular and there's many variations of it. I did a post a while back on it actually.

Pumpkin and potato are the main ingredients and as Australia is now very multicultural there's different spins in it drawing from those cultures.

I love soup, such a handy meal to have and great for winter which is where we're headed here. I'll be eating soups if all kinds for the next months, and not complaining at all. 😁

Please, don't mention about Lindt , else I'll buy another chocolate box tmr. 😂

We have a lot of traditional soups in Romania, but as you mentioned, they may be different from one area to another.
For example, our friends pinkwizz who's in the other part of the country, (really, 9hrs driving). They serve all their soups being sour. We dont (we, I mean, in my area). Well, this is just an example.

Anyways, definitely soups are winter's best friends. I love soups too, especially bean soup. And...chicken broth. 😂 I eat too much and I like everything. Better stop here, else I'll write you a reply of 3699926621 words.

I'll not utter another word about Lindt. When I'm told not to mention Lindt I don't mention Lindt because I know the mention of Lindt can make one want Lindt, so I just don't mention Lindt. 😇

Hurrah for soup, long may it live! 😁

Ok, got your point, thanks. 😒🤣🤣

Lindt. Lindt. Lindt. Lindt. Lindt 😵😵

😵😵 whispering: hypnotize Galen!. Hypnotize Galen!

I have only one wish now: I really hope that you're the one wanting Lindt! 😈

Ok, so now you know the way to hypnotize me...I'm not sure if I should be worried or not. 😁

I've just got a coffee at a little cafe near to an appointment I'm early for...not a single chocolate in sight! It's not a very nice cafe though, but it's all that I could find.

Well, you'd be hypnotized only about the Lindt. 🍫
Sorry for my late reply, but I hope the coffee was ok and you had a chill moment, thats what matters! 💯

The coffee was ok, not great, but the moment was needed, a chance to regroup and gather my thoughts prior to my business meeting.

Chef Deli blowing our minds with another recipe of hers🥰🥰

Haha. This is not a Chef Deli recipe. Is too easy to make 😂😂😂.

😘😘

This soup looks so tasty and delicious, that it is a good option to enjoy during these days, even though I've never eaten lamb before, it seems alike to beef, Am I right? I like all the ingredients you add to this soup! Thanks for sharing

Hmmmm. Not really, I cant say lamb is similar to beef. In my opinion they're not, I think they taste totally different. But thats only me. I know people saying they are something alike. So I think it depends on everyone.

But you can do this recipe with beef if you'd want to.

I haven't tasted lamb in my whole life. I like how you combined meat and vegetables in your recipe. It feels like I am much healthier if I eat them. It's just colorful and flavorful to look at. Love it.

Well, this is a classic here. The soup with all its ingredients. Romanians eat lamb and sheep all year round, but I think thats mostly in Spring.

I think a bowl of this veggie lamb soup is healthy enough and its comfort especially in the cold evenings.

This looks truly delicious and it's so bad that I did read this with an empty stomach🤦‍♀️

Haha. I hear u. It happened to me as well multiple times and these food photos just trigger you appetite 😆

Wow! Looks amazing 😍

Thank u! 💓

You made a delicious soup.

Thank you. It's quite common here. Do u have a tradiyional soup in your area?

Welcome dear friend

Omg look really warm, I rarely use lamb as an ingredient but this soup make me mouthwatering 💖

We don't have it too often either but we enjoy it when we do. I honestly like lamb meat. We like oven baked lamb meat with a tabbuleh salad on the side.
