Homemade Green Beans - Vegan and Easy

Hey you foodies, are you ready for yet another easy recipe for homecooked meal?

This time I am cooking green beans, first because we had some "heavy" food last two days and second because my toddler loves it!

It's easy, cheep and fast to make, full of fibers and you can freeze the leftovers for another time.

Ingredients:

  • Green beans (mine were actually yellow)
  • One big carrot
  • One big yellow onion
  • Garlic
  • Salt and pepper
  • Olive oil
  • Flour and paprika

Preparation:

It's as easy as it gets. First, as always I would prepare everything that needs to be chopped.

I heated up some olive oil and firstly sauteed the onion, garlic and carrot, before adding the beans. I like to add a bit of water and sautee on low heat until the onion becomes translucent.

I added water as needed, little by little, and cooked it all together for at least an hour, on lowest heat possible. If I learned anything from my mother, that is an amazing cook, is that you can't really rush these lunches.

After an hour or so, I removed the pot from the heat and added flour and paprika. Mixed it all together, carefully, as the flour has a tendency to clump up. Then I added cold water and put it back on the stove to cook for another 15 minutes.

Quite an easy meal to prepare. I only incorporate green beans and carrots into other meals, never thought it could serve as a main dish on it's own.

It's one of our staple meals in Serbia. Dating back when we were much poorer country and meat was considered a luxury :) But honestly it's delicious and very healthy!
