Let's make an 'eggplant pahiya' that is perfect for lunch as well as treats to guests.

How are you,I would like to say good evening to all my dear friends. This dish I am going to share with you today is called 'Eggplant Pahiya' in my country.I do not know why that name.But very interesting. Let's see how to make it.

Ingredients;

  • 250g of egg plants
  • A cup of oil
  • 1/2 teaspoon of turmric powder
  • a teaspoon of mustared powder
  • 1/2 tablespoon of sugar
  • In need salt powder
  • a teaspoon of pepper powder

  • A tablespoon of vinegar
  • 20 g of Maldivesfish
  • Chopped b onions
  • Curry leaves
  • Garlic cut into long strips
  • green chillies cut into long strips

The method of making;

Wash and clean eggplant cut into long strips and add half a teaspoon of turmeric and salt powder to it.

Put the well-mixed eggplants in a pan and fry in oil.It is not necessary to fry until it is mostly golden.

Fry the eggplant and fry the big onion in the remaining oil.Fry the garlic until golden brown.Fry the curry leaves and chillies quickly so that they do not change color.

Put two tablespoons of vinegar in a pan and place on the stove.

Add mustard powder, pepper powder, sugar and salt powder and mix well.

Now add the washed and cleaned maldives fish pieces.

Stir it all over low heat for about two minutes.

Now add the pre-fried eggplant.

Then add the pre-fried big onions, curry leaves, garlic and green chillies.

Stir in all the salt to taste and remove from the stove.

Come and taste, this eggplant pahiya with hot rice.

This eggplant pie is perfect to treat a guest to a lunch at home.Also suitable for a festive occasion. I think this is a lot better than the eggplant curry that is eaten the same way every day.

Here in Philippines, we use to combine eggplant with egg and fry it or sometimes we just boil the eggplant. But no matter what you will make out of it, it’s still delicious
