How are you,Good evening to all my dear friends. The last few days have been very busy. Was really busy. That's why I was not able to come and my dear friends. And I didn't even have time to try a new recipe.In my childhood and in my school life, this roll with eggs can be called as another snack that I enjoyed the most and was added to my lunch box. I really like it. I still make it almost regularly and I give it to my child. However let's see how to make this vegetable with egg roll.
Ingredients;
- Boiled and mashed two medium sized
potatoes - About 5 small onions, finely chopped
- Finely chop a few curry leaves
- Finely chopped a piece of pandan leaf
- Cut two cloves of garlic into small
pieces - A green chillie and cut into small
pieces - 100ml of oil
- Grate a normal carrot into small pieces
- Cut a leek into small pieces
- Cup and half Cup of wheat flour
- 60ml of water
- Half teaspoon of turmeric powder
- Half teaspoon of pepper powder
- 1/4 teaspoon of cumin powder
- One and half teaspoons of salt powder
- One and half teaspoons of chilli pieces
*Cut two boiled eggs in half
- 30g of breadcrumbs
The method of making;
Add flour to a bowl and add half a teaspoon of salt powder and one table spoon of coconut oil to it, stir this mixture and add water little by little to make flour mill.
Knead well for three to four minutes, cover with a lid and keep aside for about ten minutes.
Meanwhile, put another pot on the stove and add two tablespoons of coconut oil to it. When the oil heats up, add chopped garlic, chopped curry leaves and pandan pieces and saute.
Then add chopped onion and green chilies and stir.
After that add remaining salt powder, turmeric powder, cumin powder with pepper powder to this mixture.
Add chopped carrots and leeks with low flame.
Turn off the flame and add the chilli pieces and after that add the crushed arthapala and stir well and remove from the heat.
The prepared flour can be separated into six small balls from the mill.
Sprinkle some flour on the rolling disc and thin the balls one by one into squares. Thinly slice.
Keep a little of the prepared vegetable mixture in the middle and make it thin.
Keep a half egg.
Fold them into squares one by one according to the order of the image.
Need to make batter for this. For that, add two tablespoons of flour and add 1/4 teaspoon of salt powder to it and add water little by little to make the normal liquid mixture.
Dip the prepared roti in this liquid and then roll it well in breadcrumbs.
Add to hot oil and fry on low flame until golden on both sides. Remember to fry on very low flame. If not, the inside will be raw.
As a snack to relive my childhood and school days, this vegetable scrambled egg roll is really a wonderful memory. I also add to my child's lunch box. I can guarantee that it is clean because it is made at home. And it is very tasty. We can eat it as a snack.
