You can always use stevia! I normally use that or brown sugar. I find that brown sugar adds creaminess and volume to the batter. But yes, skip the sugar if you want since extra ripe banana is already natural sweeteners.

Not a fan of stevia either. I would perhaps use honey or something like dates, plums or raisins. I prefer fruit sugars, if I can help it.
