Chicken Raw Vegetable Salad - Ecotrain Cooking Contest

Hello Hive community !!!
I love food contests, thanks to @ecotrain for creating this contest. Today's dish that I want to introduce to everyone is called "Chicken Raw Vegetable Salad". After reading this week's @ecotrain thread I was wondering: "what healthy food should I make to enter the contest"? Asian cuisine is very diverse, there are too many nutritious and healthy dishes such as Vietnamese noodle soup, rolls, mixed fruit yogurt, porridge, soup, .. and then my daughter wanted to eat chicken and she wanted me to make something with chicken in it. Well and I picked a raw vegetable and chicken salad for this week's contest. Children often hate eating vegetables, I am a mother and every day I have to create delicious dishes that include vegetables and my daughter can eat them. And I had a great creation, my daughter loved this chicken salad. Here is the recipe for this dish.

Ingredient:

  • Chicken thighs
  • Peanut
  • Cucumber
  • Carrot
  • Onion
  • Coriander
  • Thai basil
  • Mixed sauce: Fish sauce, garlic, chili, sugar, lemon

Step by step:

  • First you need to wash the herbs and tubers. I usually soak them in salt water to remove the bacteria in the vegetables, if you just wash them with water, the vegetables will not be clean.
  • Wash chicken thighs, then boil chicken thighs until cooked about 20 minutes, then remove chicken thighs to a plate and let cool. Then remove the skin and cut the chicken thighs into bite-sized pieces.

  • Peel the cucumbers and carrots then remove the flesh from the cucumbers. Cut them into bite-sized pieces. Similarly, remove the skin of the onion and cut the onion into bite-sized pieces. Cut the herbs into small portions.

  • In a bowl, mix 1 teaspoon sugar, 1/2 chili pepper (remove the seeds), 1/2 lemon, 2 tablespoons fish sauce, and 1 teaspoon salt. Stir until you see the sugar and salt dissolved.

  • In the past I used to roast peanuts in a pan, but now I have a microwave and I use it to roast peanuts. It takes about 4 minutes to roast the peanuts until golden brown.
    Let the peanuts cool, then pour the peanuts into a basket with small holes, rub the peanuts with your hands and remove their skins. Then pound the peanuts.
  • Pour all ingredients together, use chopsticks to mix well, then sprinkle more roasted peanuts and herbs on top.

    Based on this Asian salad recipe, you can make other salads with other ingredients. For me salad is a part of my life, salad is good for health, good for digestive system, good for skin, and good for our body.There's no reason for me to stop eating salads.

What do you think about this dish? It is really beautiful, delicious, healthy meal but not boring. This is my way to add green vegetables to make my daughter excited and always want to eat.
