Another breakthrough for me!!!

I love fast cooking with minimal kitchen cleaning. This usually calls for Chinese-style of cooking with a lot of steaming method or stir-fry method. Kitchen usually remains clean and thus, only a little cleaning needed after the cooking.

The other day, I was clearing my freezer and saw a pack of frozen mackarel fish. Oh my, how could I forgot about it? I recalled husband also purposely bought a pack of curry powder mix for me specifically for cooking curry fish. So, without further hesitation, I cooked a curry dish. Also, since my youngest son was in discomfort and not eating but only being tube-fed milk, it was timely to cook a curry dish for the husband, myself and the eldest son.

Fish Curry

It was farely easy to cook although still not as clean as cooking in Chinese style. I think the one I cooked was more toward Indian style considering the curry powder mix I used was the brand called Baba. There were instructions stated at the pack using cumin seeds, fennel seeds, tamarind and fenugreek but I did not have those, so I added whatever powder herbs I had. I also did some tweak to the ingredients. I also totally skipped the tamarind water since I did not have it.

Ingredients I used

  • 10 cloves garlic
  • 1 onion
  • slices of ginger
  • two potatoes
  • 1 carrot
  • salt and a bit sugar
  • cumin powder
  • coriander powder
  • 4 pieces of mackerel
  • Baba's fish curry powder
  • fish balls
  • tofu beancurd

Steps

  1. Diced the garlic, ginger and onion. Also, cut the potatoes and carrots to desired sizes.
  2. Put the potatoes and carrots to steam to soften them.
  3. Clean the mackerels thoroughly and dry them. Slightly coat with flour and pan fry, this is to avoid the meat being broken down while boiling in the curry.
  4. Heat up oil in a pan and pan fry the fish for few minutes each side. Take out from pan and put aside.
  5. In the same pan, add a little bit more oil, sauté the onion, ginger and garlic till aromatic. Add in some cumin and coriander powder, followed by the half pack of the fish curry powder mix.
  6. Add in some water so that the whole thing becomes like a curry paste. Continue stir fry till the whole house becomes very fragrance. 🤣
  7. Then, add in water to make it into curry sauce. Let it boil for 3 minutes, followed by adding in fish balls and tofu beancurd, then the fish and the soften potatoes and carrots.
  8. Let it simmer for another 5 minutes then it is done. Seasoned with salt.

My eldest son actually walked in the kitchen in to ask what was I cooking because it smelled like curry. He must be thinking, "Impossible mummy is cooking curry.😂". He was so happy that I cooked curry dish, his favourite. He could eat curry every day just like his daddy. We ate this with rice. I was happy with the outcome. It was really appetizing and thankful for curry powder mix for people like me who do not know how to cook curry dish. Fortunately, it was kind of easy, and we had a delicious dinner.
