While you have had biltong over there I would still like you to try the authentic local thing. There are so many recipes! I have eaten so much of it from all over I can definitely say that the location I is dried at with certain temperatures and humidity definitely play a part in the curing process.
There's several businesses here, owned and operated by South Africans, who make it and sell it so I can only assume it's the same. They don't use South African beef though but Australian beef is better anyway. Lol.

I like biltong better than beef jerky, the flavours are better, boerewors is also good (which we also get here in abundance). It's all good though you know? I like to try things from different places and once I'm onto it I'll come back for more.
