INGREDIENTS:
1 ½ cup whole-grain flour
1 cup oatmeal
3 tablespoons Millet
1 tsp. Ground cinnamon
1 tsp. Baking powder
½ tsp Salt
½ cup melted coconut oil
½ cup maple syrup
1 cup finely grated carrot
½ cup dried cherries (or raisins, cranberries, dried apricots)
1 tsp. Finely chopped ginger
PREPARATION:
1. Preheat the oven to 180 ° C.
2. Spread the baking sheet with parchment, if necessary, grease with coconut oil.
3. In a medium-sized bowl, combine the sifted flour with oatmeal, millet, cinnamon, baking powder and salt.
4. In another bowl, mix coconut oil, maple syrup, carrots, cherries and ginger.
5. Add dry ingredients to them and mix well.
6. Allow the dough to brew for 5-7 minutes.
7. With a tablespoon (or hands), form a cookie and place on a baking sheet.
8. Bake for 10 minutes or until golden brown.
