🍋 1 lemon
🫒 1 cup of extra virgin olive oil
🌿 2 tbsp of dried Mexican oregano
🌿 1 cup of Italian parsley leaves
🧂 Salt
⚫️ Black pepper
Instructions:
- Prepare the Chimichurri Sauce:
- Begin by removing the seeds from the red habanero peppers to reduce their heat. Place the deseeded peppers into a food processor.
- Add the garlic cloves (grated or minced), the zest and juice from one lemon, and half of the extra virgin olive oil to the processor.
- Blend the mixture until it reaches a smooth consistency without large pepper flakes.
- Add the Italian parsley leaves and the remaining olive oil to the processor.
- Season with salt and black pepper to taste, then blend until all ingredients are well incorporated, forming a vibrant chimichurri sauce.
- Season the Pork Ribs:
- Season the country-style pork ribs generously with salt and black pepper on all sides.
- Searing the Ribs:
- In a large pan, heat a small amount of cooking oil.
- Sear the seasoned pork ribs on all sides until they develop a golden crust.
- Cooking the Ribs:
- Preheat your oven to 400°F (204°C).
- Transfer the seared ribs to an oven-safe dish.
- Bake the ribs in the oven for 40 minutes.
- Finishing Touches:
- After the ribs have cooked for 40 minutes, remove them from the oven and evenly spread the spicy chimichurri sauce over the top.
- Cover the dish with a lid or foil and return it to the oven for an additional 5 minutes to meld the flavors.
- Serving:
- Allow the ribs to rest for a couple of minutes before serving.
- Garnish with remaining parsley if desired and enjoy with your favorite sides.
