Ingredients:
🐖 3 lb Country-style pork ribs
🌶️ 4 red Habaneros
🧄 3 garlic cloves
🍋 1 lemon
🫒 1 cup of extra virgin olive oil
🌿 2 tbsp of dried Mexican oregano
🌿 1 cup of Italian parsley leaves
🧂 Salt

Instructions:

  1. Prepare the Chimichurri Sauce:
    • Begin by removing the seeds from the red habanero peppers to reduce their heat. Place the deseeded peppers into a food processor.
    • Add the garlic cloves (grated or minced), the zest and juice from one lemon, and half of the extra virgin olive oil to the processor.
    • Blend the mixture until it reaches a smooth consistency without large pepper flakes.
    • Add the Italian parsley leaves and the remaining olive oil to the processor.
    • Season with salt and black pepper to taste, then blend until all ingredients are well incorporated, forming a vibrant chimichurri sauce.
  2. Season the Pork Ribs:
    • Season the country-style pork ribs generously with salt and black pepper on all sides.
  3. Searing the Ribs:
    • In a large pan, heat a small amount of cooking oil.
    • Sear the seasoned pork ribs on all sides until they develop a golden crust.
  4. Cooking the Ribs:
    • Preheat your oven to 400°F (204°C).
    • Transfer the seared ribs to an oven-safe dish.
    • Bake the ribs in the oven for 40 minutes.
  5. Finishing Touches:
    • After the ribs have cooked for 40 minutes, remove them from the oven and evenly spread the spicy chimichurri sauce over the top.
