Ingredients:

- Masa (corn dough) for sopes

- Refried beans

- Tomatoes

- Green chilies

- Garlic cloves

- Sour cream

- Vegetable oil for frying

- Salt to taste

- Comal or grill

- Mortar and pestle or blender

- Frying pot or skillet

Instructions:

1. Begin by heating up your grill or comal over medium heat and place the green chilies on to roast until they're charred on all sides. Once done, remove them from the heat to avoid burning and set aside.

2. Warm up the refried beans to a thick consistency to ensure they don't leak out of the Sopes when assembling.

3. While the beans are warming, chop the lettuce and submerge it in water to disinfect. Set it aside to dry.

4. Peel the roasted skin off the chilies and garlic cloves. Using a mortar and pestle or blender, begin grinding the chilies, adding a pinch of salt and peeled garlic cloves until you get a smooth paste.

5. Finely chop a bit of onion and cilantro and mix it into the chili paste to create your homemade salsa.

6. Grate the cheese and set it aside.

7. Now, prepare your sopes by shaping the masa into small, thick disk-shaped patties. Heat a non-stick pan or comal over medium heat and cook the sopes until they're golden brown on both sides.

8. While the sopes are still warm, pinch the edges to create a small rim around the edge. This helps to hold the toppings in place.

9. Heat oil in a frying pot or skillet (enough to come up about half an inch on the sopes) and lightly fry the sopes until they are crispy. Remove and drain on paper towels.

10. To assemble, spread a generous layer of the warm refried beans atop each sope. Sprinkle with grated cheese, then add a layer of the disinfected lettuce.

11. Spoon over the homemade salsa and finish with a dollop of sour cream.

12. Serve immediately and enjoy these delicious sopes, experiencing the warmth and flavor of Mexican home cooking.

Cooking Tips:

Pinch the sopes while still warm to easily shape the edges without cracking them.
