From the cozy corner of Einfach Backen's kitchen, Lara shares a treasured delight that brings the warmth and comfort of homemade pastries right to your table. Mini apple strudel: a delicious twist on a classic, ensuring everyone gets a bite of happiness. Wrapped in crisp, golden filo pastry, each bite is a blend of sweet, spiced apples with a hint of citrus—all wrapped up in a neat little package. It's perfect for serving at gatherings, as a family dessert, or as a sweet treat for yourself alongside a scoop of vanilla ice cream or a dollop of creamy vanilla sauce. Let's get baking!

Ingredients:

- 4 to 5 medium apples, peeled and sliced into 1 cm pieces

- 2 tablespoons of sugar (adjust to sweetness preference)

- 1 tablespoon of all-purpose flour

- 1 teaspoon of ground cinnamon

- Juice of half a lemon

- 50 grams of melted butter, plus extra for brushing

- 1 pack of filo pastry

- Icing sugar, for dusting

- Vanilla sauce or vanilla ice cream for serving (optional)

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Equipm---ent: Baking tray, parchment paper, pastry brush, mixing bowl.

Servings: Approximately 16 mini strudels

Instructions:

1. Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).

2. In a mixing bowl, combine the sliced apples with the sugar, flour, lemon juice, and cinnamon. Stir until the apple slices are well-coated in the mixture.

3. Unroll the filo pastry pack. Cut the individual sheets in half to make two batches.

4. Place one half-sheet of filo pastry in front of you and brush the edges with melted butter.

5. Add two tablespoons of the apple mixture onto the filo sheet, leaving about a 2 cm margin on the left and right sides.

6. Fold in the margins to enclose the ends and roll the pastry into a tight packet, taking care not to tear the filo.

7. Transfer the rolled strudels onto a baking tray lined with parchment paper.

8. Repeat the process with the remaining filo sheets and apple mixture until all the pastry is used up.

9. Brush the tops of the rolls with the remaining melted butter.

10. Bake in the preheated oven for about 15 minutes or until the strudels are golden brown and crispy.

11. Remove from the oven, allow to cool for a few moments, and dust with icing sugar just before serving.

Cooking Tips:

- If the filo pastry tears, don't worry. Just patch it up with an extra piece of pastry and a bit of butter.

- Serve warm for the best flavor and texture. Feel the contrast of the warm strudel with cold vanilla sauce or ice cream.
